These days, Roxana Gardilcic -owner of the Azapa olives producing company Alto Albarracines- is in Sevilla. Not as a tourist, but as a student of the XXI Elaboration Course of Table Olives, issued by Spanish Instituto de la Grasa. "Although I have been a long time in this business, there are always things that can be learned. For example, I want to know how to conduct a olives tasting, which is something that I believe would help greatly to Azapa growers", she says.
